Cinnamon Crispy Date Bites (AIP/Paleo/Refined Sugar-Free)

I love cinnamon. I have always been a huge fan of cinnamon. There’s just something about the sweet spicy flavour that draws me in over and over again.

I love medjool dates. Pre AIP, Larabars were my go-to snack. A bar made from dates and nuts, brilliant! Now that I’m on the autoimmune protocol, nuts are out, but dates? They are still allowed occasionally, and in moderation, since they are quite the sweet treat. My fave are medjool dates, they just melt in your mouth!

I love plantain. Nah, I’m totally obsessed with plantain! I usually enjoy it by frying slices in alot of coconut or avocado oil. They are awesome. But every once in awhile, I like to have a convenient bag of plantain chips. Yes, I said CHIPS! You guuuys, I’m on a strict elimination diet and I’m eating CHIPS! I just can’t even!

So with Valentine’s Day coming up, I wanted to use my beloved cinnamon in a little AIP treat. Holidays are permission to have a small treat, am I right? Three of my fave ingredients and five minutes later, these cinnamon crispy date bites were born!

Yield: 4 servings

Ingredients

Instructions

    1. Place all ingredients in a blender or food processor and process until it comes together as a ball and plantains chips are broken up into tiny pieces.
    2. Use hands to roll bite sized pieces.
    3. Enjoy right away or place in the refrigerator for a few hours and enjoy once cool. I personally prefer them cool!

  1. I have Lichen Sclerosis as well and really flare with dates. Have you gotten passed the flare up going through AIP?

    • Hi Sandi.

      There was a time when I flared with anything that had sugar. But I feel like I’ve healed enough where I can enjoy some natural sugars, including dates, in moderation. Definitely in moderation!       • Thanks Rebecca! I had a little bit of soaked and smashed dates on the first Cassava tortilla I made and I had a flare from it. Bummer. It was good though.

        I love your site and thanks for putting yourself out there and helping those of us suffering with the same condition. I’ve been gluten free for years and pretty sure I have Celiac (it runs in the family, I just don’t want to consume gluten to find out). Your site is a great resource. Hope the AIP diet helps.

        • Awe thanks Sandi, that sure means a lot to me! We are in the same boat in regards to celiac. My Grandmother was diagnosed with Celiac years after I gave up gluten. I’m pretty sure I have celiac as well but am not willing to undergo the test (eating gluten) to get the official diagnosis.   2. I made these today and really enjoyed them. Definitely better cold. I decided to add a pinch of maldon salt flakes which worked out very well. I also had some of the mixture that wasn’t wet enough to form into a ball, and I spooned it over steamed vegetables, which was really tasty.
