Citrus Gummies (AIP/Paleo/Refined Sugar-Free)

A couple weeks ago, I took over the Autoimmune Paleo Instagram. This was my second time doing so, and both times have been a wonderful experience. It has given me the opportunity to give back a little to the community I’ve learned SO much from AND I get to connect with other autoimmune warriors who are taking their health into their own hands! What a blessing! 

On my very last post of the takeover, I shared this recipe for Citrus Gummies. I’ve made them a few times since and feel they absolutely need to be on the blog here as well because they are oh so refreshing! Refreshing but also filled with healing properties! 

Lemon and lime:   Juice from lemon and lime both support the liver and aid digestion by stimulating bile flow. Also, I don’t know about you, but I like my gummies to have some tang!!! 

Coconut water:  I love using coconut water in my gelatin gummies not only because it offers sweetness but also because it is filled with electrolytes helping to increase energy!

Gelatin:  Like my beloved collagen peptides, gelatin also heals intestinal permeability, aka leaky gut.

Ingredients

Instructions

    1. Place coconut water, lemon juice, lime juice, and honey into a saucepan on medium to high heat. Stirring frequently.
    2. Once mixture is boiling, briefly whisk in gelatin, making sure there are no clumps.
    3. Pour mixture into a glass baking dish or a silicone mold and set in refrigerator for 1-2 hours to firm up!
    4. If you used a baking dish, cut into squares.
    5. Enjoy!

    Is there any suitable substitute for the coconut water in this recipe, I am dangerously allergic to coconut

    • You could use mineral water or just water. You may want to add a little more honey since the coconut water adds some sweetness.

  2. Just put these in the fridge to set. I cannot wait to try them!

  4. Not sure what I did wrong but these melt when not in the fridge. Within 5 minutes. :-/

    • Oh no that doesn’t sound right! Sounds like either there was too much liquid or not enough gelatin. Are you sure you used 2 cups of coconut water and 1/4 cup of gelatin?

      OR it’s just really REALLY hot where you are! I keep mine in the fridge but they shouldn’t melt within 5 minutes of taking them out.

      • Yeah, I followed the recipe. Maybe they hadn’t set long enough! Still like them 🙂 it’s like jello (that I have to eat fast haha)

        • Oh that’s definitely a possibility. Try leaving them in the fridge longer to see if they set better! Glad you enjoyed it anyway ????

  5. I sweetened with Splenda for my father-in-law that has diabetes and Parkinson’s
    Every weekend I search Pinterest recipes for diabetic desserts to make for him so he doesn’t sneak sugar cookies or cakes that people always bring over and he is very sneaky!

  6. Wondering about the texture of these. I made a different recipe and they were harder than I imagined, if that makes sense. Do you find when you make these that they are more on the softer or harder side?

    • I would say on the softer side, definitely not as hard as a gummy candy, but firmer than Jello. Hope that makes sense!
