Guacamole (AIP/Paleo/Whole30/Keto)

This guacamole is a super quick and easy recipe BUT full of flavour! It’s also totally AIP compliant, Paleo, Whole 30, and Keto.

So my kids and I are kind of obsessed with guacamole right now (or “guac” as my kids say)! It’s such a nutritious dish that requires hardly any effort. This one is extra simple, only five ingredients, because you know I’m all about the easy recipes!

What you need to make this Guacamole

Avocado

Yep you guessed it, avocados are needed! You want them ripe enough so they’re easy to mash with a fork.

Avocados are crazy good for you! They are a fat, but the right type, the kind you want to eat for your health! They keep your blood sugars stable without clogging your arteries. In fact, they are especially good for your heart, as they contain oleic acid!

Olive oil

So why olive oil when avocados already provide the healthy fats ?

It adds more flavour!

I’ve made this guacamole with and without olive oil and I always prefer it with! It helps with the texture, but mostly, I find it enhances the flavour. Plus, olive oil gives you more of that beneficial oleic acid!

Garlic

Another superfood, garlic is anti-inflammatory, anti-fungal, and anti-microbial. So basically it’s an amazing food AND it adds so much darn flavour! I like using fresh garlic in this guacamole!

Lime

The lime juice adds tang and it just complements avocado SO well! However, if you don’t have lime on hand, you can substitute with a few teaspoons of apple cider vinegar.

Salt

I prefer using Himalayan pink salt or real salt as they are full of natural minerals!

Now from time to time, I will add some extras in like red onion or cilantro, but most often, I just keep it super simple! You can make this guacamole super creamy OR if you prefer your guacamole more chunky, just go easy on the mashing. It really is easy to tailor it to your taste!

It’s the perfect dish to bring to a potluck party, especially if you want to make sure you have something that you can eat. My kids love it with tortilla chips but keep it AIP by serving it with cassava chips, plantain chips or simply veggies! It is always a hit!

Ingredients

  • 2 ripe avocados
  • 2 garlic cloves, crushed
  • 2 tbsp olive oil
  • Juice of half lime
  • 1/4 tsp salt

Instructions

  1. Remove the pits from the avocados and scoop out the flesh into a medium sized bowl.
  2. Mash the avocado with a fork until desired consistency is reached.
  3. Crush the garlic cloves (I use a garlic press) and add to the bowl.
  4. Add in the olive oil, lime juice, and salt.
  5. Now mix it all together.
  6. Enjoy!
