Apple Cinnamon Granola (AIP/Paleo)

WARNING: This granola is dangerously addictive! I literally had to hide it from myself and hubby. From myself so I wouldn’t go overboard, from hubby so there would be some left for me later on, teehee!

What you Need:

  • Coconut Flakes OR Tigernut Flakes – This recipe uses toasted coconut flakes  but you can easily make it with tigernut flakes and it is equally delicious! I really enjoy the tigernut version as a cereal. 
  • Apple Chips – I use Martin’s apple chips which is a Canadian brand, I believe Bare Apple Chips are similar. 
  • Coconut Oil or Avocado Oil – Coconut oil is my first pick, but if you need to avoid all forms of coconut, avocado oil works as well! 
  • Maple Syrup – as a Canadian, my sweetener of choice! 
  • Arrowroot Starch – this helps to achieve granola clumps, which is the best part about granola in my opinion.

Eat by itself, on top of coconut yogurt, on top of smoothies, or as a cereal with either coconut milk or plain tigernut milk.  YUM!

Instructions

    1. Combine coconut or tigernut flakes, apple chips, raisins, cinnamon, and salt in a large bowl, set aside.
    2. In a small bowl, mix oil, maple syrup and arrowroot until arrowroot dissolves.
    3. Pour oil mixture over dry ingredients, and toss until combined.
    4. Spread onto a parchment lined baking sheet.
    5. Bake at 300 for 30 mins or until crispy and toasted.
    6. Enjoy!

  5. My daughter and I are AIP and we absolutely love this granola. We always double the recipe and increase the amount of raisins. I burned the first batch I made…I now check frequently while in oven. For us it takes much less time than 30 minutes, probably just our oven.

  7. Hi any suggestions for toasting tiger nut flakes?

    • No need to pre-toast the tigernut flakes in this recipe. They will toast as it bakes in the oven with the rest of the ingredient! Hope this helps!

    I used the coconut flakes as that is available to me locally but hoping to try the tigernut in the future. We love this! We actually call it cereal for our family, we love to serve it in a bowl with whatever milk we are using at the time. It tastes a lot like raisin bran and it is amazing! Thanks so much for all your amazing recipes and making it a little bit easier on us in this journey of AIP!

  9. Iā€™m trying to avoid oils and have generally found coconut milk works as a sub in many baked goods – do you think that would work in this recipe?

  10. This was such a treat! I have been on AIP for over 6 months now and this was so delightful to find as granola was one of my go-to breakfasts before. Mine didn’t take the full 30 minutes – more like 20min at 300F.
