These blueberry turkey breakfast sausage are a tasty grain-free breakfast option. They’re also paleo, whole30 and AIP compliant!

I get it, breakfast can be kind of (or a lot!) confusing when you first adopt a healthier lifestyle. Especially if you’re avoiding grains, like on paleo and whole30.

But it can be even more frustrating while sticking to an even stricter protocol like the autoimmune protocol. When you have to avoid grains, nuts, seeds, and eggs, it might sound like breakfast is out of the question. But I’m here to tell you, nothing could be further from the truth!

Breakfast does not have to be limited to typical breakfast foods like eggs, toast, and oatmeal. Breakfast, just like any other meal, has endless options!

Bone broth soup is a comforting breakfast, or keep it refreshing with a salad topped with salmon or sardines. Breakfast is a great time to get nutritious organ meat in like liver or heart. Or have a nutrient dense smoothie!

But I also understand it’s perfectly normal to have those classic breakfast cravings! And it’s ok to have an AIP muffin or pancakes once in awhile!

Now, although these blueberry turkey breakfast sausage are not your typical breakfast, they do have more of a breakfast vibe than soup. And they may just satisfy those regular breakfast cravings!

These sausage patties are done in no time. Mix ingredients together, form into patties, fry on each side – done!

Freezer friendly

Want to stash the freezer with some ready made breakfast options? These are perfect! Freeze them once they have cooled completely. To keep them from sticking to each other, place a piece of parchment paper in between each patty before placing them in a freezer bag. Then when you’re ready to have one for a quick breakfast you can warm it up in either the microwave, toaster oven or oven!

Instructions

  1. In a large bowl, combine turkey, sage, ginger, cinnamon, and salt until well incorporated. Gently fold in blueberries.
  2. Form into 8 even sized patties, about 1/2 inch thick.
  3. Heat coconut oil in a large skillet on medium heat. Add in turkey patties and cook the first side for about 4-5 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.
  4. Enjoy!

  1. DELICIOUS!!! Sweet + savory. I didn’t have powdered ginger so used a little fresh minced ginger. Also added a pinch of rosemary powder. I will be making these again soon!

  2. Do you think these would cook in the air fryer? I have 4 young so I’m all for putting things in the oven and walking away. Lol

    • I actually don’t have an air fryer and have never used one. But if it’s possible to cook other patties, like burger patties, in the air fryer, I don’t see why these wouldn’t work… Please let me know if you give it a try!

  4. Hi Rebecca. I’m new to AIP and so grateful for the many recipes you and others share! I have a question about the ground turkey in this one. When shopping for meat are you looking for meat without sugar or other things added? What brand ground turkey would you suggest as ok? Thanks!

    • Absolutely just plain ground turkey, any brand should work just make sure there isn’t any additional ingredients! 🙂
