This has been one of my go-to recipes for years now and I thought it was about time I share it with you all!
Why I love this coleslaw dressing!
Easy and Quick
You only need four ingredients – full fat coconut milk, olive oil, apple cider vinegar, and salt.
And all you have to do is add those four ingredients to a jar and shake it up. OR you could add them to a small mixing bowl and whisk together, but you get the idea!
It doesn’t take much effort at all and that’s why it’s one of my fave go-to recipes. Plus it’s tasty!
Convenient
If you’re already on an allergen free diet like AIP, whole30, paleo or keto, chances are you already have all the ingredients for the dressing on hand.
Now you’re welcome to shred your own cabbage and carrots to use with this dressing but if you’re like me, and needing a break from the kitchen – just grab a pre shredded bag of coleslaw from the grocery store.
We all know how convenient foods are limited when you’re following AIP or just eating healthy overall. SO when I am able to purchase a bag of coleslaw and all I have to do is whip up this dressing – I call it a win!
Now I prefer this recipe as a coleslaw dressing, but really, it would be great over any type of salad!

Ingredients
- 3/4 cup full fat coconut milk
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1/2 tsp salt
Instructions
- Place all ingredients in a mason jar.
- Either whisk or put lid on and shake, shake, shake!
- Enjoy!

How long does this dressing last in the fridge?
I would use within 3-4 days!
I love this dressing! Thanks for sharing. I pack a single serving in my lunch meal prep for work days sometimes. So easy to mix with bagged slaw mix. I add the dressing in the night before so it’s nice and fresh. I cut the recipe in half and it lasts me long enough for my work week. I’m not a big vinegar fan so I cut this measurement in half and add a small drizzle of organic maple syrup to my coleslaw just before eating (mixed in before eating). So good!
