It’s the end of peach season around here, and oh my goodness, has it been amazing. I look forward to peaches all year long.
They are a fave fruit fo sho, as you probably could tell from my peachy plantain cobbler recipe. I talk about how one of my dreams is to go peach picking … one day my friends!
I really can’t get enough of peaches and want to make the best while they are in season. SO I came up with this salad, and it’s been on repeat ever since!
I’m obsessed with this salad for TWO reasons:
It uses fresh and seasonal ingredients. Anyone else can’t get enough of the crisp cucumbers and juicy peaches? Seriously this time of year is awesome!
It’s quick and EASY to put together. Whisk up the most simple salad dressing and toss it together with three ingredients. BOOM you’re done!
Yield: 2-4 servings
Cucumber Peach Salad (AIP/Paleo/Whole30)

Ingredients
- 2 cups cucumber, sliced
- 1/2 cup red onion, sliced
- 1 cup peaches, chopped
Dressing
Instructions
- Add cucumbers, red onion, and peaches to a large bowl, set aside.
- Whisk together dressing ingredients.
- Add dressing to salad, and toss.
- Enjoy!
This is such a wonderful recipe. So simple and yet flavorful. I made it for a potluck and everyone loved it. I made it last year when I first saw the recipe, and I added cooked shrimp to it as well, which was a great addition. Thanks for a great recipe!
