After doing some work in our backyard this year, I finally planted a garden, and I am thrilled about it! I had one years ago in our old place and missed it so much. I’m so grateful to be able to walk in the backyard and pick fresh veggies.
The taste of home grown veggies are 100 times better than any vegetable available in the produce section of big grocery stores . There’s really no comparison!
My radishes were ready first. And I am AMAZED at how spicy and delicious they are. Plus I have an over abundance or them right now in my garden. SO I knew I had to make a recipe using these crisp radishes.
What you need to make this Cucumber Radish Dill Salad
Cucumber
Cucumber has anti-inflammatory properties. And according to traditional Chinese medicine, cucumber is a cooling food. Meaning it can help to clear heat and toxins from the body.
I used English cucumber in this recipe and left the peel on. But you can use other types of cucumber and remove the peel if you prefer!
Radish
Radish has all kinds of great benefits such as:
- aiding digestion
- improving blood flow and reducing blood pressure
- detoxifying the liver and kidneys
Red onion
Like radish, red onion can also improve heart health and act as a liver detoxifier. Plus who doesn’t love red onion in a salad?
Creamy Dill Dressing
This salad uses my most recent dressing recipe! The creaminess of the dressing complements the crisp cucumber, radish, and red onion perfectly!
The dressing calls for:
- Coconut milk
- Avocado oil
- Apple cider vinegar
- Dill
- Salt

This cucumber radish dill salad is a deliciously fresh and healthy dish that is simple to make. It's also AIP, paleo, whole30, and Keto!
Ingredients
- 2 cups cucumber, sliced
- 1 cup radish, sliced
- 1/2 cup red onion, sliced
- 1 recipe of creamy dill dressing
Instructions
- Add sliced cucumbers, radish, and red onion in a large bowl. Set aside.
- In a small bowl or jar, whisk (or shake if covered) together the creamy dill dressing.
- Pour dressing over veggies and toss.
- Enjoy!
