Do you ever get in a cooking rut? Where you make the same things over and over and you just don’t have any extra energy to put any more effort into your meals?

Well that was me recently.

It is easy to get in a rut especially when you’re following a more restricted diet or protocol. And let’s face it, although AIP has grown so much in the last few years, it can still be very difficult to find convenient pre-made sauces and seasonings, at least in standard grocery stores.

So sometimes I just resort to a simple sprinkle of real salt on my meats and I’m ok with it…most of the time.

BUT I got to a point where I just couldn’t take it anymore and I had that urge to jazz things up. My food wasn’t giving me life, like it should!

Enter this lemon thyme marinade.

I really wanted something that didn’t take much effort but added a lot of flavour. So a few simple real-food ingredients thrown together for a few hours, and success, major flava!

These lemon thyme marinated drumsticks are easy to make and and only contain simple clean ingredients, which are considered AIP, Paleo, Whole30, and Keto!


Ingredients

  • 2 lbs chicken drumsticks
  • 1/3 cup avocado oil
  • juice from 1 lemon
  • 2 garlic cloves, pressed
  • 2 tbsp fresh thyme leaves
  • 1/2 tsp salt

Instructions

    1. Place avocado oil, lemon juice, garlic, thyme, and salt in a large ziploc bag. Seal and shake to mix.
    2. Pat the drumsticks dry with paper towel then place in marinade. Seal the bag and shake it up until all drumsticks are coated.
    3. Place in fridge for at least 2-4 hours before cooking.
    4. Either grill or bake the drumsticks.

    To Grill:

    1. Preheat your grill.
    2. Cook drumsticks over direct heat for 30-35 minutes, or until internal temp reaches 165F, rotating every 5-7 minutes.
    3. Remove drumsticks from the grill and let rest for 5 minutes before eating.
    4. Enjoy!

    To Bake:

    1. Preheat oven to 400F.
    2. Place drumsticks on a baking sheet with wire rack or a baking sheet lined with parchment paper.
    3. Bake for 35-40 minutes or until chicken is no longer pink inside.
    4. Enjoy!
