Instant Pot Nomato Ketchup

This nomato ketchup is super simple and quick to make with the help of the Instant Pot. It’s also nightshade, gluten, and dairy free, plus paleo, and AIP compliant!

I don’t know about you but pre AIP (or pre clean eating), I was allll about the ketchup. I loved my Heinz and it was eaten with practically everything!

So needless to say, one thing I really missed when going AIP or adopting a clean eating lifestyle was giving up a lot of the sauces I used to use, especially ketchup. Sauces bring SO much flavour and fun – yes sauces are fun IMO!

I have a few sauces on the blog but not a ketchup (well, until now). So naturally, I needed to perfect an AIP ketchup to share. Plus, I really wanted a ketchup that I can enjoy at any time without having to worry about nightshade reactions!

Why I love this Instant Pot Nomato Ketchup recipe

Simple

It is truly a super simple recipe – it only involves 7 ingredients in total, which includes water and salt.

It only requires two fresh veggies: carrots and beets. And you probably have the rest of the ingredients on hand already: apple cider vinegar, onion powder, coconut sugar, salt, and water!

Quick

Basically, you chop the veggies and throw them in the instant pot, along with the apple cider vinegar and water. Set the instant pot to cook for 8 minutes. Once done, allow to cool. Then transfer to a blender, add the rest of the ingredients and blend!

There ya go, that’s all there is to it! And you’ve got a good amount of ketchup to use with your meals or freeze for later use.

Freezer friendly

This recipe makes 4 cups so if you’re not going to use it up anytime soon you can freeze it! I like freezing it in a freezer safe glass dish. Then when you’re ready for some ketchup thaw it either in the fridge or on the counter.

Also very easy to batch cook so you always have some AIP nightshade-free ketchup available in the freezer!

It really does taste like ketchup

OK so maybe it doesn’t taste exactly the same as Heinz ketchup – but it sure does hit the spot when you’re craving it. It’s a pretty darn good nightshade-free version if I do say so myself!

Ingredients

  • 5 cups chopped carrots (approx 6-7 medium sized carrots)
  • 3/4 cup chopped beet (approx 1 medium sized beet)
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 3 tbsp coconut sugar
  • 1 tbsp onion powder
  • 1 tsp salt

Instructions

  1. Chop the carrots, peel and chop the beet and add to the instant pot.
  2. Add the apple cider vinegar and water to the instant pot.
  3. Set instant pot to 8 minutes on manual high pressure.
  4. Once done, you can either release the pressure manually with the valve OR allow it to realese on it’s own naturally.
  5. Turn the instant pot off and allow to cool for 10-15 minutes.
  6. Transfer to a blender and add the remaining ingredients. Blend until smooth.
  7. Enjoy!

Notes

Store in refrigerator for up to one week OR freeze in a freezer-safe glass container for later use!

  1. Can this be made on the stovetop, rather than in an Instant Pot?

    • Yes, I haven’t done it myself as I just love using the instant pot. But if I were to do this recipe on the stovetop, I would steam or boil the vegetables first then add the 1/2 cup water and acv, and seasoning before blending.
