Peppermint Gingerbread Tea Latte (AIP/Paleo)

This peppermint gingerbread tea latte tastes like the holidays in a mug. It’s also dairy free, caffeine free, paleo, and AIP! 

I’m not sure if you know this about me or not BUT I am kind of obsessed with Hallmark Christmas movies. They’re super cheesy and corny but they totally make me happy!

They get me in the Christmas mood. After watching, all I wanna do is go to a Christmas festival and bake cookies and sip on a hot cocoa

Bonus, they also give me inspiration for new holiday recipes! Like this peppermint gingerbread tea latte. 

The other day while watching one, the future couple were at a coffee shop and they ordered a peppermint gingerbread latte and I thought, “hmm what a great combination, I have to make one for the blog!” 

So here we are!

This is definitely my go-to holiday drink this year. Last year it was my peppermint hot chocolate, the year before it was my hot chocolate. But this year I’m all about the tea latte. This is a great festive drink for those who don’t tolerate cocoa and/or don’t like carob. 

Ingredients you need

Peppermint tea

This is where the peppermint flavor comes from, obvi! Traditional medicinals is my fave brand.

Peppermint tea has sooo many benefits including aiding digestion and easing headaches. So enjoy this holiday drink while reaping the health benefits!

Coconut milk

I use full fat coconut milk in this recipe but it also works with lite coconut milk! But any milk would work really.

Gelatin or collagen

I like my latte drinks with extra foam, so I use gelatin. But if you’re not a fan of foam, you can use collagen or omit all together. But I like adding the gelatin/collagen for some protein and for the gut health benefits.

Coconut sugar

I like using coconut sugar, but really you could also use maple sugar, maple syrup or even honey. Watching the carbs? You can use lakanto sugar (note: lakanto sugar is not AIP friendly).

Blackstrap molasses

This is what really makes the gingerbread flavor. Blackstrap molasses is one of the most nutrient dense sweeteners out there. You only need a teaspoon because it’s also dense in flavor!

Ginger

I mean it’s gingerbread so makes sense to add ginger. Looove me some ginger! Ginger is such a great ingredient, especially when on AIP, as it adds that spiciness without the nightshades!

No need to use the fresh stuff in this recipe, you only need a bit of ginger powder.

Cinnamon

Honestly, I could add cinnamon to everything since I love it so much. Did you know cinnamon also helps with stabilizing blood sugar?

 Salt

You only need a small pinch!

Instructions

    1. Place tea bag in boiling water and let steep for 5 minutes.
    2. Remove tea bag then add tea and the rest of the ingredients to a high powered blender.
    3. Blend until smooth.
    4. Enjoy!
